Nick have you seen cucumber beetles? I have had them eat flesh of the pumpkin and leave scarring. I think that they can even feed through the sheet, if I remember right.

and another photo this one from my garden. This pumpkin grew with these spots for most of its existence the damage probably happened early on. between day 20-35 perhaps. (Just guessing).

I haven't seen any on the pumpkin itself but its totally possible they're biting the pumpkin at night. I think putting a box fan on the fruit 24/7 has helped keep them off if that was the issue.
