You can see the color that it was "supposed to be" under the stem where it somehow got a little natural light. What did you have it covered with?

I wasn't able to cover that section under the stem since the stem was blocking me from putting sheets down that far

Or indirect. This is similar to other fruit like apples, that don't color up well unless they have sufficient light?! Looks heavy from this side.
