I've seen several photos and GPC lists, but they don't all agree.

I've seen a scale photo saying 1278.8 KG,
I've seen a weigh-off site say it was 2818.9 lbs
I've seen GPC say it's 2819.3
I've converted 1278.8 kg, which equals 2819.27.

I will assume GPC is the final word?

Officially the record is gonna stand at 2819.3 pounds (1278.8 Kg) there have been a lot of sites out there with the wrong information. My official post on Garden of Giants (Facebook Group) has the correct information from the very start along with the correct New World record circumference on the pumpkin.
