Well, I knew my giant beets were getting pretty big, but the wind blew one over today so I removed it from the garden. Until I can get it weighed, what is the best way to store it to keep it from losing weight and moisture? Should I keep the greens on until then? Put it in a bucket of water? From the way I had to drag it, I'm guessing it to be somewhere between 30 and 40 lbs. Hard to tell with all the greens on.

Wrap it in newspaper & place it it a foam cooler then duct tape the the seal(lid) on cooler. Then place in refrigerator. You will loose very little weight & should be ok for 3-4 weeks.Works great on maters.I learned this from Marvin Mitchell last year.My Mater only dropped from 3.91 lbs to 3.89 lbs in almost a month.
