This year I'm using heating cables. I buried them down about 6" and they seem to be maintaining a soil temp of about 78 degrees. What's a good soil temp to have? What would be considered too warm (greater than 85 degrees)? Anything to look out for besides the soil temp? Thanks!

I'd be very happy with 78.

Just keep monitoring temps...had a faulty t-stat in one set of cables couple seasons ago and things got too hot!
