I'm going to invest in a submersible water pump to utilize rain water more easily. What gallons per hour should I get to have a similar psi as the tap water? I plan on running it to a sprinkler thats 50 feet away and level with the pump, so it won't have to pump uphill.

I've seen a similar setup (pulling water from a pond) for watering a lawn and it had a small pressure tank. Maybe that's what you'll need to get the pressure you desire.

Id use a 1/10 to 1/5 hp sump pump that will do just fine

The pressure will depend on the flow in gpm, the head of the pump and the pipe line friction loss. Now for the simple explaination a pressure system like a well uses a pump run off a pressure switch which turn on/off at set pressures. A pressure tank is used to reduce run times and equalize the pressure bounce between low and high pressure setting of the pressure switch. A sump pump is not designed to to pressurize a piping system only to dump water from one location to another and has limted head rating (psi). A true pressure pump is rated in gpm and psi not gph.
