When does a pumpkin start changing from white to orange/red/green etc? Is the color change an indication that it's getting too much light or that it's starting to rippen?

Light will speed up color change but it is usually a sign of maturing fruit

Early color change can be a genetic factor. A pumpkin that with be a dark orange will tend to turn from yellow to orange much earlier in the season.
