Is there a way to favor getting a nice healthy root out of the top of your vine (versus the big dead nub that forms there sometimes)?

Eh, if you cut a very thin strip of skin off the vine, apply root growth stuff to the vine, then bury it...You'll get excessively large amounts of roots.
