What is the best way to collect and then preserve the seeds from a giant pumpkin?

Remove them, rinse them, dry them, spray with 10% bleach and then bag them and keep them at a fairly constant temp and humidity...this all takes about 10-14 days...

I never bleach em. So long as you have them dried. I mean Totally dried you should be okay. If youd like you can also dust them with some anti fungal powder,

I read on another site to dry 2-3 weeks, and keep cool and dry. Mine are in a ziplock in the fridge and they have always germinated fine.

10% household bleach water bath.
Dry several weeks until "skin" fly.
Freezer - the colder the better down to the internationally-recommended standard −18°C (0°F).

Once the seeds are dry, the clear skin coating will flake off. Once this happens you can put them in a zip lock. I put mine in a zip lock bag with the top open for the another week just to make sure there is no more moisture in the bag. Then you can store in a dry place after that.
