Subject: Will my pumpkin last without leaves.

There are literally 10 leaves left on my plant . The pumpkin is 750-800 lbs. It is still growing about 2 lbs a day I think. Will my pumpkin loose weight sitting there or will it maintain its weight the vines are still healthy. I have it uncovered to get it a little oranger. Should I keep it covered?

Even if the leaves are roadkill, there are roots, your pumpkin should keep going if you take care of what's left. Cover it at night like you would otherwise, it's up to you to uncover it for color or not.
