I planted some seeds last week, and one seedling seemed to really struggle to emerge. It finally broke free this morning, and after I gently removed the seed casing, I saw 2 seedlings! I only place 1 seed in each peat pot, so I know for a fact that there was only 1 seed. The seedlings seem to be conjoined at the stem. Has anyone ever heard of this? I took some pictures if anyone would like to see them.

sounds like early onset of double vining also known as ribbon vining (2 headed cow) caused by some sort of genetic damage. almost all growers give them up as a lost cause. If you have a back up go with it.

Two embryos in one seed shell. Does it have 4 cots?

Mutant seedlings are fun to play with but rarely amount to anything. Cut & run.

That happened to me one year on the 1020 Papez seed. Mine were two complete separate seedlings though it was clear that they were once one embryo because of the way the cots were shaped. I planted the largest of the two and re potted the smallest. Disaster befell the first plant and I still had the second so I planted that one in place of the first one. It grew a beautiful plant that produced a personal best for me and came in second place at the weigh off. None of the offspring from that fruit(732 crews) showed any mutant tendencies.

I had fraternal twins come from one seed....I grew both and they did just fine.
