I know you're supposed to put a white sheet on your pumpkin to keep it out of the sun, but I want to know if it should actually be on the fruit touching it or suspended above it.

the only time we dont need to shade the fruit is on cloudy days for most of the season.then we expose the fruit to the sun from second week in september on so the color can develope better.

I have had problems with slugs when I cover with a sheet, so I rig 'sunshades' over fruit that allow air circulation. In fall when I need the warmth, I do use blankets which are removed during the day and dried, which helps keep the slugs out of there.
