A friend in South Texas is interested in growing an AG and asked for some input. I'm looking for recommendations that may differ from growing up North. Clearly water will be a problem and summer will be crazy hot! Thanks.

Where in S. Texas? Is it humid or dry? Dry and hot bring significant issues with it such as low uptake of Ca and Mg. Misting creates other issues also so is not the ultimate solution. Definitely there is a reason why us Southern growers inherently have lower weights.
Start early and end early for best results.

when it comes to seeds grown in hot weather, no seed is fool proof. Some will be heat resistant, others not so good, including so called "hot" weather seeds. A good rule of thumb is to start 3 or 4 plants in an area you plan to keep one, and see which plant does better in the heat, cull down to the best. Misting is a must, sometimes shade cloth too, depends on the plant. There are lots of things that work for northen growers that do not work so well in the hot south. Get in touch with an experienced grower close by and learn as much as you can from them.
