I like Bell Beans. It adds a good amount of nitrogen, but it doesn't leave a lot of "thatch" when you cut it. In about a week after being cut and tilled in it is gone.

crimson clover, winter rye, winter wheat and hairy vetch is what I have used previously.

In northern California you want to get them in now for a good winter crop. Getting a bit colder now so the sooner the better. If you don't get a good crop over the winter, plant one in very early spring. Be sure to till it under before it goes to seed.

If it all possible you also want to cut your cover crop and let it dry before you till.
