Is there any actual benefit to shading the fruit...I've heard and read all sorts of things. The sun makes the skin harder, therefore less supple and it can't stretch and grow as easily...or the sun ripens it more quickly... what gives?

You already answered your own question. If you want to test it lay a white towel or sheet across half of a pumpkin and leave the other half uncovered. Leave it like that for a couple weeks and see what happens.
