Its been advised to set multiple fruit. Should I cut the leaf and/or the adjacent lateral when I know the pumpkin is set or not at all? Or do I wait until I cull to one? Thanks in advance!!

wait...not going wait to long though...have to make a quick decision as to which one is "wired up" the best...measure for a couple of days see which one is putting on the most or has the best vine position for good stem set....90 degrees off the vine...got to get some S curve into the main vine for the slack you will need later as the pumpkin starts to grow....good luck...it's the exciting part of the season for you!!
