I know it is a basic question but, which way will the main grow when you plant out a seedling?

Usually opposite first true leaf. Some growers will plant this side of the plant on a bit of a downward angle too, to help the vine come down a little easier.

I am fortunate (well sort of I guess) in that I live far enough north and my mains always run to the south towards the sun, LOL, I never have to train them, I just plant them on the north side of the patch.
